Chicken Wrapped in Parma Ham

Serves: 4
Syns per serving:
  • Original: 2
  • Extra Easy: 2 if using HEA 0.5 sins

100G boursin Light Garlic & Herb ( 1.5 Sins per portion or HEA)
4 chicken breasts
8 sun dried tomatoes
8 slices of Parma ham (0.5 Sins per slice)
1 small Savoy cabbage
Low calorie cooking spray
Salt & freshly ground black pepper

method

1. Pre heat the oven to 180 C/ Gas 6.
2. Cut a slice in the chicken breast at the thickest point, to create a pocket.
3. Spread a quarter of the Boursin into the chicken pocket and place 2 sun dried tomatoes into each pocket.
4. Wrap 2 sliced of Parma ham around each chicken breast, making sure to seal the pocket.
5. Place the chicken breasts on a baking tray and spray with one-calorie cooking spray. Season with black pepper. Cook for 20 minutes.
6. While the chicken is cooking, slice the cabbage and steam for 4-5 minutes.
7. Serve the chicken on a bed of cabbage or your other favourite vegetables and Jacket potatoe
